Eszett wants to keep Silver Lake’s vibe alive, natural wine and all
There has been yet another change in plans for the former Trois Familia space in Silver Lake. Now a newcomer named Eszett is on the scene, with plans to become a casual, cross-cultural destination for the neighborhood.
Eszett (the name of a German grapheme for a sharp S sound) comes to Silver Lake thanks to Spencer Bezaire, a longtime chef who has cooked at Cafe Stella, L&E Oyster Bar, and Highland Park Brewery, and his wife and partner Sabrina Bezaire, who has run front-of-house duties for various places around the city for years. As for the food, Spencer tells Eater:
My roots are Japanese, French and German. I don’t fit neatly into any sort of box; I don’t expect my food to either. For the first time in my career I don’t have to mold into any one category … Expect the menu to change often, be very market driven, and at the same time approachable.
Sabrina will handle front of house and wine duties, with a mostly California and Austrian natural wine bent.
When the closure of Trois Familia was first announced, it was believed that former Sqirl chef de cuisine Javier Ramos, who had been doing pop-ups in the space, would take over. The proposed expansion even had a name, El Vy, but the plans never came to fruition and the property was quietly put back on the market.
ABC paperwork is up now for Eszett, and the Bezaires says they’d like to open sometime this fall.
