Momofuku’s fried chicken operation Fuku has opened at the LA Coliseum, just in time for USC college football and LA Rams games. The quick service setup means diners can score spicy fried chicken sandwiches, chicken fingers, fries, and more from the concessions truck at gate 28. Fuku also has an upcoming location at the SocialEats food hall along the Third Street Promenade in Santa Monica, and will surely add more in and around Southern California in the coming years.

Chef Josiah Citrin teased a few new details on the future of his fine dining restaurant Melisse the other day when speaking to Evan Kleiman of KCRW’s Good Food. Per Citrin, the pared-down fine dining side of Melisse (there will be an a la carte restaurant as well) will offer only 6 or so seats per service, two services per night, and will feature a built-in open kitchen where cooks prepare twelve courses in front of customers and serve them directly.
Next-level tacos
Chicas Tacos is next up in the faux meat game, landing some Impossible Meat hard-shelled tacos starting today. There will be limited supplies.

Chef Craig Hopson has a new gig down in Redondo Beach. The former Farmhouse executive chef is now at Sea Level, the waterfront restaurant at the Shade Hotel in the South Bay.

The LA Times has an interesting story out on South LA’s preference for chicken sausage, particularly at its localized barbecue and soul food restaurants. There’s a lot of history packed into the seemingly simple casing, starting really with the 1940’s-era Great Migration.
More bread for everyone
A new European bakery and cafe opens tomorrow along Beverly Boulevard. It’s called Haute Mess, and it lands at 7673 Beverly Boulevard, right next to the longstanding Della Terra Restaurant, just steps from the Grove. The all-day cafe will keep early morning through evening hours, with plans for breads, patisserie, sandwiches, and simple lunchtime fare during daylight hours, before transitioning into wine and beer at night. Owner Michael Simhai, who also owns Della Terra next door, will also offer takeaway market items as well as free valet for customers daily.
