Steakology is a meat-centered concept opening next Wednesday at Westfield Village in Woodland Hills. In place of white table cloths, proper service, and the usual markers of a classic steakhouse experience is a fast-casual setup with a menu featuring USDA prime steaks sold exclusively by weight.
“We have always loved great steak, but felt that the pretense and theatrics of the traditional chophouse wasn’t practical or approachable,” explains co-founder David Adir. He and his brother Yoav also own and operate local sandwich chain The Carving Board.
The menu features wagyu sirloin, rib-eye, New York, and filet mignon ranging from $2.60 to $3.50 per ounce. That means a 12 ounce cut, a decent portion for most appetites, would range between $31 and $42—a satisfactory price for Prime grade beef. There’s even ahi tuna available for the seafood-inclined. Each cut is individually selected, weighed, and hand-carved to order.
Rounding out the menu are side dishes like fingerling potatoes, cheesy corn, garlicky mushrooms, and a wedge salad.
